These are a prefect alternative to full sugar chocolate muffins and only around 8g carbs per batch of 8.
110g almond flour or ground almonds
1 tbsp cocoa powder
50g butter or coconut oil
30g Natvia sweetener or alternative
1 tsp of baking powder
pinch of cream of tartar
8 muffin cases
Pre heat oven to 180C
Weigh all ingredients out
Melt butter or coconut oil in microwave on defrost for 20 secs
Beat eggs, add melted butter, sweetener and cream of tartar then mix well
Add cocoa powder, almond flour and baking powder to your mixing bowl and give it a good mix.
Add wet and dry ingredients together.
Divide evenly between your 8 cases.
Bake for 10-12 minutes or until knife comes clean.
break up 2 muffins in a bowl and add a dash of double cream for a luxurious pudding for after meals.
