2 Minute Mug Cake

This very quick pudding is one off my all time favs, literally mix up all the ingredients and bang it in the microwave. There are a few different versions so I will include both recipes I use here, one is made with ground almonds and the other is made using coconut flour.


Coconut Flour Mug Cake


2 Tablespoons of coconut flour

4 tablespoons of double cream

1 egg

sugar free coffee syrup

1/4 teaspoon baking powder

cocoa powder or cinnamon for extra flavour

50ml of cream for pouring



Step 1

You need a big mug with at least 400ml capacity to stop spilling over whilst cooking in the microwave. Crack your egg into your mug, add the cream, syrup and baking powder.

Step 2

Add your coconut flour and cocoa or cinnamon and mix together until smooth.

Step 3

Place mug in microwave, I use a 900w microwave and set the timer on full for 1 minute and 50 seconds. depending on your microwave power you may need to add or deduct time accordingly.

Step 4

Once the microwave has finished be careful as the mug maybe very hot, I suggest using a tea towel or oven glove. You then want tip out your mug cake into a dessert bowl and pour over your double cream.

30g ground almonds

15g of butter or coconut oil (melted)

1/2 tsp baking powder

20ml sugar free coffee syrup

1 egg
